Overview
The ribeye is made of two parts:[1]
- The Longissimus Dorsi: Known as the eye, is the thicker cut of the ribeye
- The Spinalis: Known as the cap, is the thinner and tender cut of the ribeye
Some ribeyes have a bone around the cap, like the tomahawk, but most are boneless.
Preparation
Ribeye steak served with some bread.
