Flan

A Flan is a kind of tart found in British cuisine.[1] It consists of an open pastry or sponge case holding a sweet or savoury filling. A typical flan is round, with shortcrust pastry.

Flan Brillat-Savarin, a savoury flan named in honour of the French gastronome Jean Anthelme Brillat-Savarin:

  1. Bake blind a savoury flan case
  2. Fill the cooked flan case with a mixture of scrambled eggs and truffles
  3. Slice more truffles, heat in butter, season, and arrange on the egg mixture.
  4. Sprinkle with grated Parmesan cheese, and put in an oven or under a grill (broiler) to brown well.[2]
