Flan
A Flan is a kind of tart found in British cuisine.[1] It consists of an open pastry or sponge case holding a sweet or savoury filling. A typical flan is round, with shortcrust pastry.

Recipe
Flan Brillat-Savarin, a savoury flan named in honour of the French gastronome Jean Anthelme Brillat-Savarin:
- Bake blind a savoury flan case
- Fill the cooked flan case with a mixture of scrambled eggs and truffles
- Slice more truffles, heat in butter, season, and arrange on the egg mixture.
- Sprinkle with grated Parmesan cheese, and put in an oven or under a grill (broiler) to brown well.[2]
