Montevideo's leading news journal, El País, first published a drawing of his when he was 15 years old.[1] The company hired him where Sábat became an editor at the daily, as well as contributing work as a staff correspondent, photographer and illustrator.

He kept working after Argentina's return to democracy, in 1983. He was a known critic of President Raúl Alfonsín where he would illustrate him as a clumsy ballerina falling over the nation's economy.[2] He also criticized President Carlos Menem and Cristina Fernández de Kirchner comparing her to a mafia figure with tape over her mouth with a black eye.[3]

Sábat died on 2 October 2018, during his sleep from a heart attack, in Buenos Aires, aged 85.[4]
